Spicy Cranberry Shrimp

Ingredients
1/2 cup Cranberry sauce
4 tablespoons Cranberry sauce
1 Jalapeno (seeded and diced)
1 tablespoon Fresh ginger (peeled and minced)
3 cloves Garlic (minced)
Zest from 1 lime
2 or 3 tablespoons Lime juice
2 tablespoons Soy sauce
2 tablespoons Balsamic vinegar
1 pound Shrimp (peeled and deveined)
Lime wedges for serving

Step by Step Instructions
  1. Whisk everything but the shrimp, 4 tablespoons of cranberry sauce, and serving wedges together in a bowl.
  2. Gently mix in the shrimp and let marinate in the refrigerator for 1 or 2 hours.
  3. Preheat a grill pan on the stovetop or outdoor grill over medium-high heat. Thread the shrimps onto skewers and grill for 2 or 3 minutes per side.
  4. Slide the shrimp off of the skewers, brush them with the remaining 4 tablespoons of cranberry sauce, and serve them alongside lime wedges.
