Pasta with Cherry Tomatoes and Figs

Ingredients
150 grams
Pasta of choice
FOR THE SAUCE:
300 grams
Cherry tomatoes (mixed colors if possible)
1/4 cup
Olive oil
1 tablespoon
Red wine vinegar
1/2 teaspoon
Garlic powder
Salt & pepper to taste
TOPPINGS:
75 grams
Goat cheese (cubed)
40 grams
Prosciutto di parma (parma ham) (pulled apart)

Figs (halved)
Fresh basil
Step by Step Instructions
- Add the olive oil to a frying pan and saute the cherry tomatoes. Once the skin begins to burst, season them with garlic powder, salt, and pepper.
- Prepare the pasta according to package directions.
- Once the tomatoes begin to fall apart, stir the vinegar into the pan of sauce, then allow to cook for a little bit longer.
- Strain the pasta, return the noodles to the pot it cooked in, and mix them with the prepared sauce. Portion the pasta onto two plates and set aside.
- Cook the figs cut-side down in the pan the sauce was prepared in for 2 to 3 minutes.
- Top the pasta with figs, goat’s cheese, prosciutto, and basil and season to taste.
