Fried Corn Fritters

Ingredients
Vegetable oil for frying
3/4 cup
Cornmeal
1/2 cup
Flour
2 teaspoons
Baking powder
Salt & pepper to taste
1/2 teaspoon
Sugar
3/4 cup
Milk
1
Egg (beaten)
2 cups
Freshly scraped corn
Step by Step Instructions
- Add 3 inches of vegetable oil to a heavy bottomed pot and heat it to 350 or 355 degrees.
- Mix the cornmeal, flower, baking powder, salt , pepper, and sugar together in a bowl. Whisk the milk and beaten egg together in a separate bowl.
- Add the milk/egg mixture to the dry ingredients mixture and add a bit more milk if the mixture is too thick. Stir in the fresh corn.
- Working in batches, scoop the out batter with a 2 teaspoon scoop and carefully add each fritter to the oil.
- Cook the fritters until they are golden brown, carefully turning them over after 3 to 4 minutes of cooking.
- Do not overcrowd the pot while cooking, and set the finished fritters on a plate lined with paper towels to drain off excess oil. Season the fritters as desired, then serve.
