Salmon with Strawberry-Wine Sauce

Ingredients
4 4-ounce
salmon fillets
1 teaspoon
Olive oil (plus a bit more for drizzling)
Salt & Pepper to taste
1 teaspoon
Minced fresh rosemary
4 whole sprigs
Rosemary
1/4 cup
Minced shallots
1/2 cup
Red wine
1/4 cup
Strawberry or blackberry jam
1 cup
Chopped fresh strawberries
Step by Step Instructions
- Preheat oven to 425 and line a baking sheet with parchment paper. Drizzle the salmon with olive oil and season them with salt & pepper.
- Put the rosemary sprigs onto the baking sheet and put the fillets atop them. Roast the salmon in the oven for 12 to 15 minutes.
- Meanwhile, heat the oil in a saute pan over medium-high heat, then add the shallots and chopped rosemary and cook for 3 minutes. Stir in the wine and jam and let cook for 5 minutes.
- Add the strawberries to the saute pan and toss them with the mixture. Cook, stirring frequently, for 2 to 3 minutes. Season the sauce with salt & pepper to taste.
- Serve the salmon fillets topped with the sauce.
