Salmon with Strawberry-Wine Sauce

Ingredients
4 4-ounce salmon fillets
1 teaspoon Olive oil (plus a bit more for drizzling)
Salt & Pepper to taste
1 teaspoon Minced fresh rosemary
4 whole sprigs Rosemary
1/4 cup Minced shallots
1/2 cup Red wine
1/4 cup Strawberry or blackberry jam
1 cup Chopped fresh strawberries

Step by Step Instructions
  1. Preheat oven to 425 and line a baking sheet with parchment paper. Drizzle the salmon with olive oil and season them with salt & pepper.
  2. Put the rosemary sprigs onto the baking sheet and put the fillets atop them. Roast the salmon in the oven for 12 to 15 minutes.
  3. Meanwhile, heat the oil in a saute pan over medium-high heat, then add the shallots and chopped rosemary and cook for 3 minutes. Stir in the wine and jam and let cook for 5 minutes.
  4. Add the strawberries to the saute pan and toss them with the mixture. Cook, stirring frequently, for 2 to 3 minutes. Season the sauce with salt & pepper to taste.
  5. Serve the salmon fillets topped with the sauce.
