Oyster Mushroom Curry

Ingredients
just under 1 pound
Oyster mushrooms (sliced)
3 tablespoons
Olive oil
1 medium sized
Onion (thinly sliced)
5
Chili peppers (preferably green, sliced)
1 sprig
Curry leaves
3 large cloves
Garlic (peeled, smashed, and sliced)
1/2 teaspoon
Turmeric
1/2 teaspoon
Chili powder
Salt to taste
Bread for serving (optional)
Rice for serving (optional)
Step by Step Instructions
- Heat the oil in a skillet over low, then add the onion, sliced peppers, and curry leaf and saute until the onion becomes translucent.
- Add the garlic and fry for 2 minutes. Mix in the turmeric, chili powder, and sliced mushrooms and season with salt.
- Cover the skillet and let cook for 10 to 15 minutes, then serve on bread or over rice if desired.
