Oyster Mushroom Curry

Vegan!

Ingredients
just under 1 pound Oyster mushrooms (sliced)
3 tablespoons Olive oil
1 medium sized Onion (thinly sliced)
5 Chili peppers (preferably green, sliced)
1 sprig Curry leaves
3 large cloves Garlic (peeled, smashed, and sliced)
1/2 teaspoon Turmeric
1/2 teaspoon Chili powder
Salt to taste
Bread for serving (optional)
Rice for serving (optional)

Step by Step Instructions
  1. Heat the oil in a skillet over low, then add the onion, sliced peppers, and curry leaf and saute until the onion becomes translucent.
  2. Add the garlic and fry for 2 minutes. Mix in the turmeric, chili powder, and sliced mushrooms and season with salt.
  3. Cover the skillet and let cook for 10 to 15 minutes, then serve on bread or over rice if desired.
