Gajar Ka Halwa

Ingredients
3 cups Whole milk
4 to 6 tablespoons Ghee (divided)
1/3 cup Nuts
5 cups Carrots (peeled & grated on the large holes of a box grater)
1/2 teaspoon Crushed cardamom seeds (optional)
3/4 cup Brown sugar (more if needed)

Step by Step Instructions
  1. In a large, sturdy-bottomed pot, bring the milk to a boil over medium-high heat (stirring often). Reduce the heat to low and let cook for 20 minutes to let the milk reduce, still stirring frequently.
  2. Heat 1 tablespoon of ghee in a large heavy skillet over medium-high heat. Cook the nuts of your choice in the skillet for 2 minutes, stirring constantly. Put the cooked nuts onto a plate lined with a paper towel.
  3. Add the shredded carrots to the now empty skillet and cook stirring over medium heat for 15 minutes. Add another tablespoon of ghee if the carrots start to stick.
  4. Add the prepared milk and the crushed cardamon seeds to the skillet and increase the heat to medium-high. Stir the mixture well and bring it to a boil. Reduce the heat slightly and let cook for 30 minutes, stirring regularly.
  5. Add the brown sugar and let cook for 10 to 12 minutes, still stirring regularly. Taste and add more sugar if desired. You may also remove and discard the cardamon seeds at this stage.
  6. If serving right away, add 3 tablespoons of ghee and cook, stirring, for 10 minutes and garnish with nuts before serving.
  7. If you have cooked the halwa more in advance and are now about to serve it, heat some ghee in a wok or large skillet, then add as much halwa as you are planning to serve to it, cook stirring until a little crunchy, then garnish with nuts and serve.
