Ingredients
2 tablespoons
Butter
1 large
Onion (finely diced)
2 or 3
Spicy green chili peppers
1
Bell pepper (preferably red, finely diced)
1 tablespoon
Ginger-garlic paste
2 large
Tomatoes (finely diced)
2 teaspoons
Kashmiri chili powder
2 teaspoons
Garam Masala
1 teaspoon
Turmeric
1 teaspoon
Coriander
1 teaspoon
Ground cumin
Salt to taste
15 ounces
Chickpeas
2 large
potatoes (peeled and diced) (or use multiple small potatoes)
1 cup
Cauliflower (chopped)
1 large
Carrot (finely diced)
1/2 cup
Peas
2 cups
Water
SERVING SUGGESTIONS INCLUDE:
Butter
Fresh chopped cilantro
Bread (preferably soft)
Sliced onion
Lemon wedges
Step by Step Instructions
- Heat the butter in a pot or pan and cook the peppers and onion for 5 to 6 minutes. Add the ginger-garlic paste and cook for 30 seconds (stirring), then add the tomatoes and cook stirring for 6 to 7 minutes.
- Add the spices, chickpeas, potatoes, cauliflower, carrots, and peas, and stir well. Pour in the water, bring the mixture to a boil, cover, reduce to a simmer and let cook for 30 minutes
- Mash up the mixture in the pan with a fork or a potato masher (or pour the mixture into a food processor)
- Serve with toasted buttered bread with cilantro, onions, pats of butter, and lemon wedges.
