Chuck roast
2 teaspoons
Salt
2 teaspoons
Pepper
2 teaspoons
Garlic powder
2 teaspoons
Onion powder

Carrots (cut into 2 inch pieces)
Small potatoes

Onion (cut into quarters)
14 ounces
Beef broth
Hickory or Oak wood chips for the smoker
Step by Step Instructions
- Prepare the smoker and preheat it to 225 degrees. Season the roast on all sides with the salt, pepper, garlic powder, and onion powder.
- Place the roast directly onto a smoker rack and cook it until it reaches an internal temperature of 165 degrees.
- Put the roast into a pan along with the veggies and add the broth. Put the pan into the smoker, cover it, and cook for 3 to 4 hours
- Remove the roast and serve it.
