Fried Watermelon Bites

Ingredients
FOR THE MARINADE:
3/4 cup Red wine vinegar
4 tablespoons Chili sauce
Zest from one lime
2 tablespoons Olive oil
1 teaspoon Salt
1/2 of a seedless watermelon (peeled & diced into cubes)
FOR THE BATTER:
2 cups All-purpose flour (divided)
3/4 cup Rice flour
4 teaspoons Kosher salt
1/4 teaspoon Dried cayenne pepper
2 cups IPA beer
ADDITIONAL:
2 quarts Vegetable oil
Arugula (for side/garnish)

Step by Step Instructions
  1. Make the marinade: Mix the vinegar, chili sauce, lime zest, olive oil, and salt together. Put the mixture and the watermelon cubes into a sealable plastic freezer bag. Coat the cubes well, then refrigerate for at least 1 hour.
  2. Mix 1 cup of flour and the rest of the ingredients in the "batter" section together and let stand for 1 hour.
  3. Heat the vegetable oil to 375 degrees in a deep fryer or a Dutch oven. Put the remaining cup of flour into a dish. Working in batches, dredge the watermelon cubes in the flour, then cover them in batter. Put the cubes into the oil and let fry for about 3 minutes.
  4. Remove the watermelon cubes from the oil, let drain on a paper towel, then serve with a side of or atop some arugula.
