Ingredients
1 large
Daikon radish
2 tablespoons
Coconut oil (softened)
1/2 teaspoon
Salt
1 teaspoon
Fresh thyme leaves (divided)
Sauce for dipping (optional)
or ketchup
or mustard
Step by Step Instructions
- Preheat your oven to 400 degrees. Using a sharp knife, cut the radish into fries (1/2 inch thick and 3 inches long). Soak the fries in a bowl of water for 20 to 30 minutes, then discard the water and pat the fries dry.
- Place the fries into a bowl with the coconut oil, salt, and 1/2 teaspoon of thyme leaves. Toss the fries in the mixture until they are coated.
- Lay the fries on a baking sheet in a single layer. Bake for 50 minutes, flipping the fries over half way through (after 25 minutes).
- Remove the fries from the oven, sprinkle them with the remaining thyme leaves, and serve with dipping options if desired.
