Parmesan Roasted Acorn Squash

Ingredients

Acorn Squash
1/4 cup
Parmesan cheese, grated
8 sprigs
Fresh Thyme
tbsp
or Rosemary
2 tbsp
Olive Oil
1/4 tsp
Pepper
1/2 tsp
Salt
Step by Step Instructions
- Preheat oven to 400 degrees F
- Wash the squash, cut in half, scoop out seeds. Cut into slices, about 3/4 inch thick. Peel skin if desired.
- Toss squash slices, Parmesan cheese, herbs, olive oil, salt, and pepper together in a bowl until the squash is evenly coated; spread into a baking sheet with sides or a flat roasting pan.
- Roast in preheated oven until golden brown and tender, 25 to 30 minutes.
